I may have waiting half a year to answer this really hard question... but it took me that long to settle on my answer: "Your Song" by Elton John - the style done on it in the movie Moulin Rouge (I think it's Ewen McGregor's voice on this if I'm remembering right) really just begs for Paul's voice! I think it'd suit him perfectly if he wanted to give it a go

I agree, Phantom of the Opera's Music of the Night is my fav song. I can watch and listen to this over and over.
If Paul sings it, it would be even better. Paul would do well with any of the songs listed, and I would buy them all.
